An Añejo sous chef uses Mexican and Canadian ingredients and transforms them into contemporary dishes in a high-volume atmosphere while adhering to specifications as laid out by the head chef. In addition, the sous chef helps the chef in over-seeing the day-to-day operations including but not limited to; ordering and receiving, inventory control, labour control, food safety control, maintaining operation logs, scheduling, staff professional development and menu expansion.
