Coddled eggs are eggs gently cooked in a buttered egg coddler placed in a hot water bath, also known as a bain-marie. This method yields a tender, creamy egg with a soft, slightly runny yolk, similar to a poached or soft-boiled egg, but with the unique characteristic of being cooked within a lidded container. They can be served plain, with additions like cream, herbs, or cheese, and are often enjoyed with toast points for dipping. It is very different from a poached egg – much nicer some feel as they weren’t cooked directly in water.
